Climate: Mediterranean with continental influence, with warm summers and cold winters with large temperature differences between day and night, creating a peculiar microclimate.

Cultivation

The grapes that give rise to this organic and vegan cava come from vineyards worked following organic farming criteria, in a balanced, respectful, and sustainable way. The soils take center stage, as they are very active, with good biological conditions that facilitate rapid assimilation of reincorporated organic matter, allowing them to express themselves fully.

Production

Selection of the best plots that provide us with excellent aromatic and acidity characteristics. The base wines are made separately, but under the same criteria. Night harvesting of the grapes and after a light pressing, only the free-run juice is fermented at a controlled temperature not exceeding 15ºC, to obtain the maximum potential. Then we proceed to blend the three wines with which we will carry out the tirage. The second fermentation and aging, for a minimum of 9 months in bottle, leads us to disgorging, where we add the dosage; in the case of Pasión Cuveé it will be without any added sugar, as it is a brut nature. This respects the original product's characteristics to the maximum.

Tasting

Lemon yellow color with golden hues, clear, with fine and abundant well-integrated bubbles. Aromatic and very fruity, with notes of peach and citrus, as well as fine pastry. On the palate it is very expressive and elegant, with a fresh and creamy texture at the same time.

Pairing

Ideal to accompany rice dishes, fish, seafood, and white meats.
Serve preferably at a temperature of 6º – 8ºC.
