Site: El Martes and Rambla de Estenas
Altitude: 690 meters.
Climate: Mediterranean with continental influence, with warm summers and cold winters with large temperature differences between day and night, creating a peculiar microclimate.
Soil: El Martes sandy clay and pebbles in the Rambla de Estenas.
Vineyard age: 5 years.
Training system: Espaldera

Chardonnay 90% - Xarel·lo 10%
Cultivation
The grapes that give rise to this organic and vegan cava come from vineyards worked following organic farming criteria, in a balanced, respectful, and sustainable way. The soils take center stage, as they are very active, with good biological conditions that facilitate rapid assimilation of reincorporated organic matter, allowing them to express themselves fully.

Tasting sheet
Production
Selection of the best plots that provide us with excellent aromatic characteristics and acidity. The base wines are made separately, but under the same criteria. Night harvesting of the grapes and after a light pressing, only the free-run juice is fermented at a controlled temperature not exceeding 15ºC to obtain maximum potential. Then we proceed to blend the wines for the tirage. The second fermentation and aging, of more than 15 months in the bottle, leads us to disgorging, where we add the dosage, which in this case is free of any sugar, as it is a brut nature. This respects the original product's characteristics to the fullest.
Tasting
Of bright pale golden color, with fine and abundant creamy bubbles very well integrated. Aromas of white fruit (apple and pear). Notes of toasted bread and nuts. On the palate, incredibly seductive, offering freshness, a pleasant texture, and a persistent finish highlighting buttery touches over a background of toasted aromas, a result of its long aging on lees.
Pairing
Ideal to accompany rice dishes, fish, seafood, and white meats.
Serve preferably at a temperature of 6º- 8ºC.
